Power out? Gas Stove Top Dutch Oven Baking Recipes from Beth’s Happy Home Video

Campfire to gas stove top, it works great!
  • PUMPKIN NUT BREAD (MIND DIET IDEAL)
  • 1 cup pumpkin puree,
  • 2 eggs
  • 1/3 cup sucralose solution (12 oz water to 1/2 t. pure sucralose powder is the solution recipe)
  • 1/2 teaspoon cinnamon
  • 2 teaspoons vanilla
  • 3 T flax seed meal
  • 2 Tbls olive or canola oil
  • 3 Tbls dark brown sugar (or one tablespoon molasses)
  • 1/2 teaspoon salt
  • (Optional) 2 tablespoons non-instant dry milk powder
  • 1/2 cup chopped walnuts,
  • Stir all well and then add
  • 1 1/2 cups whole wheat flour
  • 1 1/2 tsp baking powder,

Mix until blended. Put into double foil lined greased or sprayed 8×8″ pan.

BAKE 12 minutes in Dutch oven and check for doneness. Add three minutes if necessary. (SEE video linked above for Dutch oven method.)

Four Grain Ginger Bread recipe (Corrected for Dutch oven baking)

  • 1/2 cup applesauce
  • 2 eggs
  • 1/2 cup sucarlose solution (see above)
  • 2 Table spoons olive or canola oil
  • 2 tablespoon molasses
  • 2 teaspoon vanilla
  • 2 tablespoons sugar
  • 1/2 tsp salt
  • 1/3 cup oat flour (blend rolled oats in blender)
  • 1/3 cup whole wheat flour
  • 3 Tbls flax seed meal
  • 1 tablespoon Vital wheat gluten
  • 1/3 cup corn meal or brown rice flour.
  • NOTE: For gluten free, leave out the gluten and substitute GF flour for the wheat flour.
  • 1 t cinnamon
  • 1 t ginger
  • OPTIONAL 1/2 teaspoon nutmeg and/or cloves
  • Double crinkled foil line an 8×8 spray with pan spray and bake in Dutch oven. check after 12 minutes for a knife or toothpick to come out clean. If it’s close but not quite, turn off heat but put the lid back on for a few minutes.

  • WHOLE GRAIN BANANA NUT BREAD
  • 3/4 cup mashed very ripe banana
  • 2 eggs
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1 t baking powder
  • 1 1/2 cups whole wheat flour (or gluten free flour if you prefer)
  • 1/2 cup chopped walnuts

  • Whole Wheat Potato Dinner Rolls OR Sweet Rolls (adjusted for Dutch oven volume)
  • In a bowl mix 1 1/4 cups warm water with
  • 2 Tbls sugar
  • 2 tsp active dry yeast
  • LET SIT about 5 minutes then ADD
  • 1/4 cup mashed potato flakes
  • 1 egg
  • 2 T oil
  • 1 scant tsp salt
  • 1 Tbl Vital Wheat Gluten
  • Mix well and then add
  • 1 cup whole wheat flour, mix in
  • Add enough MORE Whole Wheat flour to make a soft dough, About 3/4 cup. This may vary depending on current humidity and how packed your flour was. It should not be sticky. (See roll making video on Beth’s Happy Home if you’re unsure.)
  • Let rise in a warm place until double
  • Form in to balls for dinner rolls and place in greased Double Foil lined 8×8 pan and let rise until double again
  • OR for sweet rolls, roll into 8×14 rectangle, Spread with butter, sprinkle with sugar followed by cinnamon or orange zest. Sprinkle those with raisins, nuts, or dried cranberries, according to taste. Roll into a long roll and slice into 9 segments. Place in 8×8 double foil lined greased pan and let rise until double.
  • Bake either dinner or sweet rolls in Dutch oven about 10 minutes. Check bottoms and if they are getting dark, turn off the heat and let sit in the covered dutch oven for 4 more minutes.
