Best Cinnamon Rolls you’ve ever tasted.

Several friends have requested the cinnamon roll recipe I used for the High Priest Social last Friday. I’ve tweaked my cinnamon roll recipe so those of you who use my old recipe will want to make these little changes. I’ve never tasted a superior cinnamon roll!  The earlier versions are heavenly but these are divine! Pictures to follow on New Year’s Eve.2015-12-31 12.45.41

Best Cinnamon Rolls in the World.

Warm oven a little and turn off

soak 1 cup of raisins in warm water if you like raisin rolls.

Mix together in large mixing bowl

4 cups lukewarm water

1 cup sugar

3 generous Tablespoons instant dry yeast

add:

1  1/2 cups instant potato flakes

1 Tablespoon salt

1/4 cup vegetable shortening

1/3 cup canola oil

4 large eggs

1/2 cup of vital wheat gluten (I use Honeywell) If you don’t have the gluten, use bread flour. The result will be similar but the texture not quite as nice.

mix well then add:

all purpose white flour to form a soft dough. This amount will vary depending on the humidity. I start with 4 cups and then add gradually until it’s just beyond sticky, kneading/mixing with your (clean) hands.

As soon as the dough feels right, (not sticky but still soft like abdominal flab, (which it will soon become) I divide it in half, roll into rectangles 1/2 inch thick, spread 2 Tablespoons of butter on each rectangle, sprinkle generously with cinnamon and then sugar. I rub it in a little to mix the cinnamon and sugar.

Sprinkle with raisins that have been soaked in water or microwaved in water for a minute.

Add chopped walnuts or pecans  if desired

Rising in a warm oven. They’re about half done rising.

roll lengthwise, cut into one inch slices, place on greased cookie sheet, with about 1/2 an inch between the rolls.

Let rise in warm place (I heat the oven a little) until about triple in size.

(remove from oven for pre-heating)

Bake 12 minutes until golden in 375 oven. (Don’t bake two sheets of rolls at a time)

Cool 15 minutes and then frost with

4 cups powdered sugar,

2 teaspoons (Mexican. . .Danncy brand if you have it,) vanilla. (You can order this delightfulness on ebay)

2 tablespoons melted butter

Milk to make thick, pourable consistency. Just a little thinner than pudding.

Spend the next three hours to try to keep yourself from devouring the whole batch without sharing. If you don’t have friends that can come to your immediate rescue, they freeze well in ziplock bags.
